Absolutely the Best Fresh Blueberry Pie
1 baked pie crust
4 cups blueberries(2 must be fresh)
¾ cup sugar
¼ cup water
3 T corn starch
1 tsp lemon juice
Pinch of salt
1 tsp butter
Cook 2 cups blueberries, sugar, salt, corn starch, and water until clear(blue).
Remove from stove, and add lemon juice and butter. Cool to just med warm and add 2 cups fresh blueberries. Pour into pie crust. CHILL WELL.
BLUEBERRY BUCKLE (thank you Sue Lenck!)
stir together:
1/2 cup butter
3/4 cup sugar
1/2 cup milk
1 egg
2 cup flour
2 1/2 tsp baking powder
1/4 tsp salt
Fold in:
2 (+) cups blueberries
Put in greased 9x13 pan.
In separate bowl mix:
1/2 cup sugar
1/2 cup flour
1/2 tsp cinnamon
1/4 cup butter
(sprinkle on top)
Bake at 350 degrees for 45 minutes.
